In the prestigious national gastronomic map, Mora de Rubielos stands out as the only Aragonese representative in the Network of Gastronomic Villages of Spain. This honor is shared with other Aragonese enclaves recognized for their beauty in the network of The Most Beautiful Villages in Spain, demonstrating that in Aragon, the aesthetics of the landscape and culinary wealth create a perfect pairing.
The Network of Gastronomic Villages of Spain seeks more than just quality kitchens: it pursues complete experiences where gastronomy, heritage, and tradition merge into a single destination. Mora de Rubielos, in the Gúdar-Javalambre region (Teruel), is today the only Aragonese village that has passed the demanding selection process to enter this exclusive club.
Its medieval historical center, presided over by the gothic castle and the Ex-Colegiata of Santa María, makes it a living postcard, comparable to towns like Albarracín, Aínsa, Calaceite, or Valderrobres, prominent members of The Most Beautiful Villages in Spain. The similarity is not coincidental: like them, Mora de Rubielos combines the visual appeal of its urban layout with a strong cultural identity and a gastronomy that reflects the character of its land.
In its recipe book, we find treasures such as Teruel-style migas, roast lamb, the bacalao and legumes empedrao, artisan sausages, Ham from Teruel, black truffle, and traditional sweets. Here, cooking is experienced closely, with local products and respect for inherited recipes.
