The Route of Paquito de Ternasco de Aragón is Moved Up This Year to Coincide with Other Paquito Routes in Spain
On June 30, the best Ternasco de Aragón sandwiches from each province and the Best Paquito of Aragón will be revealed
The Route of Paquito of Ternasco de Aragón is back. From June 5 to 29, the 63 participating establishments in Aragón will offer their original proposals for Ternasco de Aragón sandwiches across the 22 locations where they are located. This marks a 26% increase in the number of participating paquitos and over 45% in the municipalities where the route is present compared to the 2024 edition.
The majority of the establishments will compete in the contest category, vying to be the best in their province and in Aragón. The winners from each province will then move directly to the national finals in an attempt to bring back the title of Best Paquito of Spain to our community.
A selected team of judges will visit each venue and assess various aspects, placing greater emphasis on preparation, presentation, and the prominence of Ternasco de Aragón in the paquito. The top 10 scoring entries will advance to the in-person final, which will take place on June 30 at Casa Lizio (Zaragoza), where they will present their paquitos to the professional jury members.
Bocatería Cuéntame from Utebo, the Best Paquito of Ternasco de Aragón 2024, and Olla de Huesca, the Best Paquito of Spain 2024, will offer their champion sandwiches from last year during this event without participating in the contest. They are also part of the route with their regular paquitos but are not competing: La Antilla Centro (which still serves the winning sandwich from the I Ternasco Sandwich Contest held 21 years ago), El Templo, Hotel Pedro I of Aragón in Huesca, and La Cantina de Rocco in Dinópolis, all of which are persistent advocates of Ternasco de Aragón between bread.

The Most Extensive Lamb Paquito Route
The Regulatory Council of the IGP Ternasco de Aragón decided to move its most popular event to June to coincide with the other regional lamb paquito routes that will take place this year in Spain. This joint strategy is reinforced and made possible by the substantial support from Interovic, the Interprofessional Association of Sheep and Goat, and by the involvement of various IGPs for lamb and kid from Spain.
In total, there will be lamb paquito routes simultaneously at more than 200 hospitality establishments across 14 Spanish provinces: Madrid, Valencia, Barcelona, Girona, Pamplona, Albacete, Cuenca, Toledo, Ciudad Real, Cáceres, Badajoz, Huesca, Teruel, and Zaragoza.
In Madrid, about twenty establishments will participate, in Catalonia a total of 21, in Valencia 19, in Castilla La Mancha more than 30, in Navarra 16 in its first participation, and in Extremadura 25 establishments will join.
63 Paquitos de Ternasco de Aragón in 22 Aragonese Localities
In the province of Zaragoza, 38 establishments from 8 localities are participating in the route: El Patio restaurant hotel, in La Almunia de Doña Godina; Bocatería Cuéntame, in Utebo; Albergue de Morata de Jalón, in Morata de Jalón; Gratal restaurant, in Ejea de los Caballeros; El Caserío, in Biel; Rodi restaurant bar, in Fuendejalón; and Sindicato café, in Nonaspe. In the capital: Cervino, La Ternasca, Casa Arriazu, El Templo, Albarracín, +Albarracín, La Republicana, San Siro, Zipi Zape, Neutro, D´Jorge Grancasa, D´Jorge Plaza San Francisco, D´Jorge Puerto Venecia, D´Jorge La Torre Outlet, El Molino Tapas Puerto Venecia, El Molino Tapas La Torre Outlet, Fran Beer Grancasa, Fran Beer Rosales, Las Torres, El Candelas, The Boss, Café de la Reina, 1885 Café, Ambigú (El Foro), La Antilla Centro, Pome, La Doris, El cocinero de Goya, La Jamada del Tubo, La Social and 3 Elementos.
In the province of Huesca, there are 11 participants in 7 localities: La Capilleta, in Plan; Gastrobar El Perdido (Hotel Oroel), in Jaca; 2 Vueltas al Plato (Antigua Casa Tous) in Linsoles (Benasque); Mesón La Villa, in Binéfar; Rockola Taberna, in Graus; and El Portal, in Alcolea de Cinca. In the capital: Olla de Huesca, La Corralaza, Hotel Pedro I de Aragón, Café del Sol – La Botería and Mérida.
In the province of Teruel, this year we can taste up to 14 paquitos de Ternasco de Aragón in another 14 local establishments across 7 localities: El Rinconcico and La Gaso, both in Mora de Rubielos; Las Vegas (Best Paquito of Ternasco de Teruel 2024), in Utrillas; La Vía Verde, in Sarrión; Los Maños, in Albentosa; Hotel La Fábrica de Solfa, in Beceite; and Bar Pipins, in Valderrobres. Also in the city of Teruel: restaurant café 1900, El Museo burguer bar, La Mina Gourmet, hotel palace La Marquesa, Pura Cepa, Hípica Valdelobos bar and La Cantina de Rocco in Dinópolis.
Creativity and Versatility of Ternasco de Aragón in Sandwiches
Many of this edition’s Paquitos once again surprise, with original cooking and presentation proposals for Ternasco de Aragón. However, the more classic recipes also stand out, featuring thin grilled fillet lightly accompanied by other ingredients, which is the more typical cut and cooking style.
In the province of Huesca, the restaurant 2 Vueltas al Plato (Antigua Casa Tous) of Linsoles, Pilar Acín proposes Pulled Lamb and Onion with Ternasco de Aragón IGP, onion, cava, garlic, bay leaf, and Perucho snack bread; Ramón Lapuyade from El Portal de Alcolea de Cinca presents his Paquita La Cubana (roast lamb with Ternasco de Aragón IGP fillets breaded and cooked pibil style, crispy madejas, mint, piparras, lactose-free cheddar cheese, braised sweet ham, 3 mustards, pickles, pickled onion, and smoked jalapeño bourbon sauce); and Mérida, from the city of Huesca, will offer their Piadina filled with Ternasco de Aragón IGP, feta cheese, red onion, and yogurt sauce.
