The Route of the Paquito of Ternasco de Aragón continues to grow and gain followers. In its 2025 edition, it has reached record numbers, with 62 participating establishments from 22 Aragonese localities, representing a 24% increase compared to last year. More than a culinary route, the Paquito has become an anticipated event deeply rooted in Aragonese hospitality and popular imagination.
The competition is fierce. Each bar and restaurant competes to offer the best Ternasco sandwich — the famous Paquito — which will be evaluated according to three criteria: cooking (40%), presentation (30%), and prominence of the Ternasco (30%). The grand final will take place on June 30 at Casa Lizio (Zaragoza), where the best Paquito in Aragón will be determined this year.
The Paquito Reinvents Itself Without Losing Its Soul
One of the keys to the success of the Paquito is its ability to renew itself each year without losing its essence. In 2025, the establishments have surprised everyone with original recipes that showcase the versatility of the Ternasco. From Pulled Lamb and Onion in Huesca to Paquito Wellington in Zaragoza, the creations have not left anyone indifferent.
For those who prefer to cook at home, the thin fillet of Ternasco from Aragón is available at over 300 sales points in northeastern Spain, including major chains like Eroski and Carrefour.
