When Holy Week bathes the streets of the Aragonese capital in purple and silence, gastronomy takes center stage. This year, Gastropasión has reached its midpoint with a resounding success among the public. Until April 6, more than 50 restaurants in Zaragoza and its province are offering an authentic gastrotour for Lent: century-old recipes featuring cod, Lent potajes, reinvented torrijas, and special fixed-price menus that include drinks.
Organized by Horeca Restaurantes Zaragoza, this initiative not only keeps the Lenten tradition alive but also projects it with ingenuity and talent into the future. “Once again, this gastronomic event is a success thanks to the drive and dedication of our restaurants in Zaragoza and the province,” claims José María Lasheras, president of Horeca. “It is essential to continue promoting initiatives like this, as gastronomy is strategic for enhancing our territory on a national level.”
Aragonese Tradition with a Cutting-Edge Soul
The “Aragonese flavor” is the hallmark of Gastropasión. The special menus combine local DOP and IGP products with modern techniques: from confit artichoke flower on fried egg foam and ham salt to grilled smoked asparagus with garlic and beetroot.
In the section of Lenten potajes, standout proposals include a stew of organic chickpeas with cod tripe and low-temperature confit kokotxa, or the classic Lenten potaje with Fuentes de Ebro DOP onion.
The cod recipes are another major attraction: fried cod loin on traditional chilindrón, cod confit in borage sauce with Fuentes de Ebro DOP onion toffee, or gratinated cod with aioli on a bed of fritada and crunchy Teruel DOP ham. Dishes that demonstrate how the Zaragoza cuisine honors historical recipes while embracing creativity.
And as a finale, the torrija, the undisputed queen of Lenten desserts. This year, the offerings are particularly indulgent: caramelized torrija with Canary banana cream and Tahitian vanilla ice cream, or the sophisticated César Augusto torrija made with brioche bread and guirlache ice cream.
