Held from January 26 to 28 at IFEMA, Madrid, the event brings together thousands of professionals from the culinary sector. Under the slogan «Aragón, Real Flavor,» the region highlights its rich gastronomic tradition and its capacity for innovation.
The Aragonese Cuisine in the International Spotlight
The Minister of Agriculture, Livestock, and Food of the Government of Aragón, Javier Rincón, emphasized the importance of Aragonese cuisine, which ranks among the best in Spain. This recognition is not only due to its Michelin stars but also to the high gastronomic standard that combines tradition and avant-garde. Aragonese products, such as wines, meats, truffles, oils, vegetables, and sweets, are the foundation of an authentic cuisine with international projection, supported by Protected Geographical Indications (PGI) and the campaign «Aragón, Real Flavor.»
Tribute to a Historical Figure
During the event, chefs Eduardo Salanova and Iris Jordán paid tribute to Teodoro Bardají, regarded as the most influential cook in the history of Aragón. Bardají is recognized for his work in the creation, dissemination, and codification of Aragonese cuisine, transforming tradition into a lasting cultural legacy. His efforts have been fundamental in establishing Aragonese cuisine as a cultural heritage of great value.

Madrid Fusión 2026 is a significant event that gathers over 25,000 professionals from the gastronomic sector, including around 2,000 congress participants and numerous international speakers. This congress, considered the most influential in the world in its category, features participation from Michelin-starred chefs, sommeliers, producers, specialized journalists, and industry leaders.
