Aragón presents its most emblematic agri-food products at the Universal Exposition in Osaka, positioning itself as a region of gastronomic excellence. The initiative by Aragón Exterior includes professional tastings and samplings for the Japanese audience.
The Jamón de Teruel with Denomination of Origin Protected holds a prominent place in the Spain Pavilion, where it is sliced and served live by Japanese specialists Masaki and Saki Yokogawa. Eight pieces of slow-cured ham have traveled from Teruel to Japan to showcase their balanced flavor, less saltiness, and delicate texture, adapted to the Japanese taste for harmony and umami.
The product is presented with a message centered on four values: purity and safety through DOP certification and complete traceability; balance and elegance due to its slow curing in a mountain climate; health and tradition as a food rich in proteins and healthy fats; and exclusivity as the first Spanish ham with Denomination of Origin. The cutting and tasting masterclasses are led by Daniel de Miguel, international director and deputy director of Interporc, and Naoto Watanabe, founder of the Japan Cured Ham Association in Tokyo.
The gastronomic proposal is complemented by wines that traverse the main wine regions of Aragón. The selection includes Gewürztraminer de Enate (DO Somontano), Generación 73 de Bodegas Tempore (IGP Bajo Aragón), Tres Picos de Borsao (DO Campo de Borja), Querencia Corache de Bodegas San Alejandro (DO Calatayud), Pi Blanco de Bodegas Langa (DO Calatayud), Corona de Aragón Garnacha Viñas Viejas de Grandes Vinos (DO Cariñena), and Crianza de Sommos (DO Somontano).
A masterclass led by sommelier Óscar Salmerón, based in Japan, highlighted the DNA of Aragonese wine to over thirty Japanese importers, characterized by its unique terroir, old vines, and low yields.
Activities and Institutional Cocktail
The Day of Aragón included an institutional cocktail with a completely Aragonese menu, featuring olives, cold cuts, traditional Aragonese migas, trout, and fruits from Aragón. All products were paired with Aragonese wines with Denomination of Origin and Protected Geographical Indications, creating a sensory journey that combines history, landscape, and gastronomic culture.
