From June 5 to 29, 2025, the third edition of the Ruta del Paquito will take place in Aragón, highlighting local cuisine through 61 establishments across 23 locations, showing a significant increase in participation compared to previous editions.
In this edition, Zaragoza has 36 participating venues, Huesca has 11, and Teruel has 14, totaling 61 establishments offering innovative versions of the Protected Geographical Indication (PGI) Ternasco de Aragón sandwich.
- Hotel Restaurante El Patio, in La Almunia de Doña Godina: Paquito del Patio, featuring pastrami from the leg of Ternasco de Aragón PGI, arugula, pickles, and mustard.
- Bocatería Cuéntame, in Utebo: Paquito Delicia de Pastores, with brisket of Ternasco de Aragón PGI, green garlic, roasted onion on eggplant cream and herb melted cheese (not participating).
- Albergue de Morata de Jalón, in Morata de Jalón: Paquiportu of Ternasco de Aragón PGI, various spices, potato, and apple.
- Restaurante Gratal, in Ejea de los Caballeros: Paquito Doña Paca (the mother of the lamb), featuring roasted shoulder of Ternasco de Aragón PGI, juice from its feet, cloud of Fonz cheese, and thistle flowers.
