HORECA Zaragoza Designates September as the Month for Management, Profitability, and Artificial Intelligence in the Aragonese Hospitality Sector

How can you determine which dishes on a menu are truly profitable? Where are the margins lost in purchasing? How can a restaurant or hotel use artificial intelligence to attract customers and create better campaigns? These are some of the questions that will be addressed in September by the Management and Innovation Program for the Aragonese Hospitality Industry 2026, promoted by the HORECA Hospitality and Tourism Foundation.

The program is approaching its final stages with three specialized workshops on menu profitability, purchasing management, and artificial intelligence applied to marketing, all designed from an eminently practical perspective directly applicable to the business.

In addition, the training is provided completely free of charge thanks to the support of the General Directorate of Tourism and Hospitality of the Government of Aragon, which is part of the Department of Environment and Tourism, facilitating access to high-value specialized training for entrepreneurs and professionals in the sector.

A menu that is also managed with numbers

The program will kick off on Wednesdays, September 2 and 9, from 4:00 PM to 9:00 PM, at the NH Ciudad de Zaragoza Hotel, with the workshop «Profitable Menu Management in Hospitality».

Over ten hours, participants will learn to analyze their culinary offerings from a business perspective: understanding which dishes contribute margins, which ones should be promoted or modified, how to reduce waste, and how to simplify the menu to simultaneously enhance profitability and operations.

The training will incorporate tools like Menu Engineering, sales and margin analysis, and digital solutions, along with artificial intelligence to support decision-making.

AI lands in hotel and restaurant marketing

The second session will take place on Monday, September 14 and 21, from 9:00 AM to 2:00 PM, at the Ilunion Romareda Hotel.

The workshop «AI Tools for Hotel and Restaurant Marketing», taught by Álvaro Alonso Candial, will provide practical knowledge on how to use artificial intelligence to improve visibility and customer acquisition.

Participants will work with tools to create texts, photographs, posters, videos, promotions, and content for social media, as well as learning how to respond to reviews, analyze trends and competition, create simple web pages without programming, or develop AI assistants tailored to their establishment.

Purchasing smarter to protect margins

On Tuesdays, September 15 and 22, from 4:00 PM to 9:00 PM, the Ilunion Romareda Hotel will host «Intelligent Purchasing in Hospitality», also taught by Luis Vaquer.

Purchasing is one of the areas with the greatest impact on the profitability of a restaurant or hotel. This workshop will review how each company makes purchases, identify potential margin leaks, organize procurement more effectively, evaluate suppliers, and improve negotiation skills.

Technology will also play a significant role here. Attendees will learn to use data, digital tools, and artificial intelligence to analyze information and make more professional and profitable purchasing decisions.

Artificial intelligence to solve real problems

The incorporation of AI is precisely one of the distinctive features of the Management and Innovation Program for the Aragonese Hospitality Industry.

The technology is not only present in specifically digital actions but also transversely in traditional areas such as purchasing, profitability, or menu management.

Short, practical training designed for business leaders

Another characteristic of the program is its format. Unlike long or generic training, HORECA has opted for intensive, specialized workshops based on real cases, compatible with the schedules of business owners, managers, and department heads.

The goal is for what is learned to be applied practically from the very next day in areas directly linked to business outcomes: customer acquisition, positioning, visitor experience, cost control, profitability, productivity, and digital transformation.
