The V Black Truffle Conference of the Province of Zaragoza returns this year with a renewed edition that strengthens its connection to the territory and aims to promote the gastronomic and economic value of this emblematic product. Organized by the Association of Truffle Growers of the Zaragoza Regions (Truzarfa), it has the support of the Zaragoza Provincial Council and the Aragon Center for Agricultural Research and Technology (CITA).
The program of activities seeks to bring the culture of the black truffle, known as the “black gold” of gastronomy, closer to the public, focusing not only on its culinary use but also on the work of producers and the role of rural areas in its cultivation and development.
Activities in the Territory
The first events will be held in the municipalities of Belchite and Zuera, where fresh truffle markets, sales of processed products, and live culinary demonstrations will be organized. These activities will allow a close-up view of the production process and the value that truffle cultivation brings to rural development.
As highlighted by Cristina Palacín, the delegate for Tourism of the Zaragoza Provincial Council, the goal is to enhance both the quality and production of truffles, as well as to bring citizens closer to the areas where they are cultivated.
Puerta Cinegia Hosts the Black Truffle Exhibition
One of the main innovations of this edition is the relocation of the Black Truffle Exhibition to the Puerta Cinegia Market in Zaragoza. This space will host the central market of the event on December 20 and 21, with a program that will include cooking shows, tastings, and activities for all audiences.
These activities will allow visitors to discover firsthand the properties, aromas, and culinary possibilities of the black truffle, one of the most valued ingredients in European gastronomy.
Training for Future Chefs
The program also includes the Contest for Hospitality Schools of the Province of Zaragoza, where cooking students will prepare dishes featuring black truffle. The initiative aims to promote knowledge of this product among future culinary professionals and ensure generational change in the sector.
An Economic Engine for Rural Areas
Beyond its gastronomic value, the black truffle has become an important engine of development for the Aragonese rural environment. Its cultivation contributes to generating economic activity, retaining population in the territory, and opening new opportunities linked to gastronomic tourism and experiences.
With these conferences, the province of Zaragoza reaffirms the black truffle as one of its major agri-food references and as a product capable of connecting gastronomy, research, and territorial development.
