Alta Barra: Taller Clandestino Reinterprets the Concept of Culinary Pairing

Taller Clandestino, a reference point for cocktail culture in Zaragoza, presents Alta Barra · Star Edition, an experience where cocktails take center stage and gastronomy plays a supporting role. This is a disruptive proposal that reverses the traditional concept of pairing, where cocktails set the tone and bites— inspired by Michelin-starred dishes— exist to enhance them. The first edition took place on November 6, 2025, in Zaragoza.

Unlike most restaurants where wine accompanies the dish, Alta Barra suggests that food should serve the cocktail. This conceptual inversion creates an experience where:

  • The cocktail sets the pace
  • The bite amplifies it
  • The bartending technique meets the culinary technique
  • The bartender and the chef share the same stage

According to Jimmy Valios, the soul of Taller Clandestino, this proposal is radical: «It was time to create an event where food exists to elevate the cocktail, not the other way around. No one does this because no one thinks of it like this. We do.»

The Event: Ron Arehucas as the Common Thread

The first Star Edition featured Jimmy Valios and Óscar Lafuente, Global Ambassador of Ron Arehucas and Best Bartender of Rum in the World 2024. Both acted as master of ceremonies, explaining each creation and guiding diners through a sensory journey.

The cocktails were crafted using Ron Arehucas Selección Familiar, reinterpreting the Canarian spirits with acidic, salty, smoky, and citrus notes. The journey included dishes such as chalaca oysters with Bloody Mary made from Zaragoza tomatoes, salmon tiradito with jalapeño aguachile, spicy tuna tartare tacos, wok-fried carabinero nigiri, curry beef cheek, and tres leches with dulce de leche ice cream. Each drink was created on the spot, in front of the diner, and each dish arrived at the precise moment.

Alta Barra was conceived to assert that a cocktail bar can lead a complete culinary experience when it possesses technique, creativity, and vision. It does not compete with restaurants; rather, it declares that mixology is an art capable of both pairing and starring in a complete experience. When food is placed at the service of the cocktail with respect, technique, and intention, both shine brighter.
