BOKOTO Updates Its Menu with a Proposal that Strengthens Its Culinary Identity

Japanese cuisine is experiencing one of its most mature moments in Spain, and Zaragoza is no exception to this trend. In this context, BOKOTO has decided to take a new step forward by presenting a refreshed menu that aims not to break with its identity, but to consolidate it through new dishes where Japanese techniques engage with ingredients and flavors deeply rooted in Mediterranean gastronomy.

During the unveiling of the new offerings, held at the restaurant on Calle Zurita, it became evident that BOKOTO’s philosophy continues to revolve around three pillars: top-quality products, technical precision, and creativity in service of flavor. Far from resorting to gratuitous fusion, the culinary team opts for a contemporary interpretation of Japanese tradition, incorporating recognizable references for the Spanish diner without sacrificing authenticity.

Among the highlights is the Usuzukuri Akami with foie, an elegant combination where the delicacy of red tuna finds a rich and balanced complement in the foie. The Oxtail Gyoza also impressed, likely one of the dishes that best represents the spirit of this new phase: a Japanese-inspired recipe that incorporates one of the most emblematic flavors of Spanish cuisine.

The journey continues with offerings like the Gyuniku no Tataki, a refined Japanese beef carpaccio that showcases the quality of the product, the Katsusando of tenderloin, a reinterpretation of one of the great classics of Japanese street food, and the delicate Nigiri Hamachi, where simplicity again becomes synonymous with excellence.

Special mention goes to the Gomoku of duck magret and foie, an intense and sophisticated creation that combines texture, depth, and balance, confirming the restaurant’s commitment to expanding its offerings toward more complex preparations while maintaining the elegance that characterizes its cuisine.

The experience concludes with two desserts that maintain the thread of creativity. The Peppered Strawberries provide freshness and contrast, while the surprising Nigiri Lemon Pie translates one of the great classics of pastry into the aesthetic and conceptual universe of Japanese cuisine, closing the menu with an original yet coherent nod.

Beyond the new dishes, the renewal of the menu reflects the evolution of a culinary project that has established itself as one of the benchmarks of Japanese cuisine in Zaragoza. In an increasingly competitive market, BOKOTO bets on a recognizable, cosmopolitan, and technically sound proposal, capable of attracting both aficionados of Japanese gastronomy and those seeking new culinary experiences.

With this new menu, the restaurant not only expands its offering; it reaffirms an identity built on product quality, respect for tradition, and a constant willingness to innovate. This combination confirms that BOKOTO remains one of the essential destinations for discovering high-end Japanese cuisine in the Aragonese capital.
