The Japanese cuisine is experiencing one of its most mature moments in Spain, and Zaragoza is no exception to this trend. In this context, BOKOTO has decided to take a new step forward with the presentation of a renewed menu that aims not to break with its identity but to consolidate it through new creations where Japanese techniques interact with ingredients and flavors deeply rooted in Mediterranean gastronomy.
During the presentation of the new proposal, held at the restaurant on Zurita Street, it was clear that BOKOTO’s philosophy still revolves around three pillars: maximum quality products, technical precision, and creativity in the service of flavor. Rather than falling into gratuitous fusion, the kitchen team opts for a contemporary interpretation of Japanese tradition, incorporating recognizable references for the Spanish diner without losing authenticity.
Among the new offerings is the Usuzukuri Akami with foie, an elegant combination where the delicacy of red tuna finds a rich and balanced counterpart in foie. The Gyoza de rabo de toro also surprised, likely one of the dishes that best represents the spirit of this new stage: a Japan-inspired recipe that incorporates one of the most emblematic flavors of Spanish cuisine.
The journey continues with dishes such as Gyuniku no Tataki, a refined Japanese beef carpaccio that emphasizes product quality, Katsusando de solomillo de ternera, a reinterpretation of one of the great classics of Japanese street food, and the delicate Nigiri Hamachi, where simplicity once again becomes synonymous with excellence.
Special mention goes to the Gomoku de magret de pato y foie, an intense and sophisticated creation that combines texture, depth, and balance, confirming the restaurant’s aim to expand its offerings toward more complex preparations while maintaining the elegance that characterizes its cuisine.
The experience concludes with two desserts that maintain the thread of creativity. The Pepper Strawberries add freshness and contrast, while the surprising Nigiri Lemon Pie transports one of the great classics of pastry into the aesthetic and conceptual realm of Japanese cuisine, closing the menu with a twist that is both original and coherent.
