The Paquito de Ternasco de Aragón Route 2025 has arrived in the province of Huesca stronger than ever. A total of eleven restaurants spread across eight towns have joined this edition, making the classic ternasco sandwich the absolute star of June.
Participating establishments include La Capilleta (Plan), Gastrobar El Perdido – Hotel Oroel (Jaca), 2 Vueltas al Plato (Linsoles, Benasque), Mesón La Villa (Binéfar), Rockola Taberna (Graus), El Portal (Alcolea de Cinca), Taberna Mil884 by Vidocq (Biescas) and, in the city of Huesca, La Corralaza, Hotel Pedro I de Aragón, and Café Mérida, among others.
Each restaurant has designed its own version of the “Paquito,” showcasing the versatility of ternasco from Aragón. Among the most striking proposals are «Paquita la Cubana,» a ternasco al pibil sandwich with crunchy madejetas and smoked jalapeño bourbon sauce, and the “Paquito Mérida,” featuring wok-adobo ternasco, yogurt sauce, tomato, and feta cheese on piadina bread.
The route runs from June 5 to 29, and the proposals will be evaluated by a professional jury that will assess the cooking (40%), presentation (30%), and prominence of the ternasco (30%). The top ten will advance to the live final taking place on June 30 in Zaragoza.
This year, in addition, the Paquito Route has coordinated efforts with other regional routes, reaching a total of over 200 participating establishments across Spain. The campaign is driven by INTEROVIC, aiming to promote the consumption of quality, sustainable domestic lamb meat.
The participation of Huesca in this route reinforces its role as a vibrant gastronomic territory, capable of reinterpreting tradition with proposals that connect with today’s audience without losing identity.
