The Vidocq restaurant, located in Formigal and run by Diego Herrero and Amaya Sarasa, has received the 2026 National Hospitality Award in the category of Hospitality Business Committed to Sustainability. The award recognizes a high-end mountain cuisine model that links local products, the region, and a reduced environmental impact.
Vidocq implements 36 sustainability measures in its day-to-day operations
The recognition granted by Hostelería de España highlights the 36 measures implemented by Vidocq to improve energy efficiency, optimize resources, and reduce the environmental footprint of its operations.
These initiatives include the reuse and recycling of packaging, as well as the application of responsible procurement criteria. Sustainability is therefore part of the restaurant’s daily operations, rather than an isolated initiative or one linked exclusively to its culinary offering.
The establishment was also recognized in 2025 with the Aragón regional award in the “Sin Huella” de Hostelería #PorElClima Awards, likewise for its 36 measures aimed at decarbonization and reducing the impact of its operations.
High-end mountain cuisine with producers from Alto Aragón
Vidocq’s offering combines high-end mountain cuisine, locally sourced ingredients, and influences drawn from the travels of its owners. The restaurant maintains direct relationships with small-scale farmers, livestock producers, and artisans in the region.
Its pantry includes products such as Latón de La Fueva, dairy products from Fonz, and vegetables from Ascara, alongside ingredients from Graus, Loarre, Sallent de Gállego, Alcolea de Cinca, Radiquero, and La Puebla de Castro, among other locations in Alto Aragón.
The project’s philosophy is based on this combination of global cuisine and local products. Vidocq currently holds one Repsol Guide Sun, first awarded in 2022 and subsequently renewed, while also retaining recognition from the Michelin Guide for years.
National award boosts Huesca’s culinary profile
The Provincial Association of Hospitality and Tourism Businesses of Huesca said the award is significant news for Alto Aragón’s culinary sector. The organization noted that the recognition once again places the province of Huesca in the national spotlight and showcases a hospitality model that integrates producers, cuisine, the region, and respect for the environment.
Vidocq will represent Huesca’s gastronomy at the presentation ceremony for the 20th National Hospitality Awards, scheduled for November 18 in Segovia.
