The IV Black Truffle Show of Zaragoza: A celebration of the «black gold» and its global impact

On December 21 and 22, the historic Palacio de Sástago in Zaragoza became the epicenter of international truffle growing during the IV Black Truffle Show of the Province of Zaragoza. This event, organized by the Association of Truffle Growers of the Zaragoza Region (Truzarfa), in collaboration with the Center for Agri-Food Research and Technology of Aragon (CITA) and the Provincial Council of Zaragoza (DPZ), attracted more than 2,000 visitors and managed to sell 12.3 kilos of Tuber melanosporum, consolidating its place as a global benchmark in the world of truffles.

A market with flavor and science
The event offered a unique fresh black truffle market, where local producers presented their exceptional quality harvests, as well as products made exclusively with Tuber melanosporum, such as cheeses, honey and caviar, without additives or artificial flavorings. In parallel, attendees were able to explore the scientific secrets of this fungus thanks to CITA, which showed its microscopic structure and explained the diversity of its aromas and varieties.

Elite gastronomy and dissemination

The program included activities that connected experts of the sector with the general public. Among the highlights were the round tables with prestigious chefs, such as Cristian Palacio (Michelin Star) and Susana Casanova, who shared culinary techniques and practical advice on truffles. In the words of Palacio, the truffle is «a ceremonial ingredient, capable of evoking memories and tradition». Casanova compared its care to a «tamagotchi» that requires daily attention.

The event also featured the participation of Eneko, winner of MasterChef 11, who dazzled with a showcooking that integrated the truffle in Christmas recipes, enhancing its versatility and culinary prominence.

One of the most innovative initiatives was the II Contest of Catering Schools of the Province of Zaragoza, where young talents presented original recipes such as truffled ravioli and creative desserts. This activity not only highlighted the gastronomic potential of Tuber melanosporum, but also encouraged training in trufficulture among the new generations.

Aragon, a world leader in truffle growing


With 95% of the national production of black truffle and more than 2,100 hectares dedicated to this crop in Zaragoza, Aragon is reaffirmed as the world’s largest producer of Tuber melanosporum. Spain leads global production with more than 60% of the international market, a position that events such as this exhibition seek to reinforce.

An engine for rural development
Beyond its gastronomic value, the truffle is a pillar for rural development in Aragon. According to Cristina Palacín, deputy of Tourism of the DPZ, this event not only boosts the local economy, but also helps to fix population in depopulated areas. Jesús López, president of Truzarfa, underlined: «The truffle is the most Aragonese product we have in the world; we must transmit its culture and value».

The IV Black Truffle Show has been a resounding success, not only in terms of sales and attendance, but also in the consolidation of Aragon as a world reference in truffle growing. With a growing commitment to innovation, sustainability and education, this event is a reminder of the power of the truffle to connect tradition, territory and elite gastronomy.
