Aragón recognizes its Michelin Stars as a reference of its culture and a driving force for gastronomic tourism

Haute cuisine in Aragon is experiencing a moment of splendor and recognition, not only nationally, but also internationally. This was highlighted this Tuesday by the president of the Government of Aragon, Jorge Azcón, in an emotional ceremony where the 11 Aragonese restaurants awarded with Michelin Stars, true ambassadors of the community and its culinary wealth, were recognized.

The event, held as part of thepresentation of the Gastronomic Agenda for Aragón 2025, was much more than a tribute to the chefs and their teams. It was a recognition of the role played by these restaurants in promoting the territory, culture and products of Aragon. As Azcón stressed, the Michelin award not only certifies culinary excellence, but also turns the establishments into destinations that attract visitors from all over the world, ready to discover the magic of Aragonese flavors.

 

For President Azcón, these awards are not only an individual recognition, but a tool for the tourism and economic development of the community. «When you do an excellent job, people go of their own,» he said, highlighting the ability of Michelin restaurants to attract visitors and generate activity in their localities.

The hospitality sector, which represents 5% of Aragon’s GDP, thus becomes one of the fundamental pillars of the economy. Each of these establishments acts as a natural ambassador of Aragon, where cuisine is not only an end in itself, but an invitation to discover the landscapes, products and traditions that inspire each dish.

The three new Michelin-starred restaurants – Ansils (Anciles), Casa Arcas (Villanova) and La Era de los Nogales (Sardas) – represent a particularly significant phenomenon: culinary excellence flourishing in small municipalities, with less than 200 inhabitants. Far from the big capitals, these gastronomic houses demonstrate that quality and talent have no borders, betting on innovation while respecting local tradition.

This new generation joins already consolidated restaurants, such as Lillas Pastia and Tatau Bistro in Huesca; Hospedería El Batán in Tramacastilla; Canfranc Express in Canfranc; Callizo in Aínsa; and Cancook, Gente Rara and La Prensa in Zaragoza. All of them make up a mosaic of flavors, techniques and proposals that place Aragon at the center of the Spanish gastronomic scene.

The province of Huesca, in particular, stands out as an indisputable reference. With seven of the 11 award-winning restaurants, it consolidates its position as the Spanish province with the highest number of Michelin Stars in relation to its population. A feat that evidences not only the passion for haute cuisine, but also the effort of chefs, producers and entrepreneurs who work hand in hand to enhance the value of the region’s resources.

The chefs who lead these houses are aware of the cultural weight of their work. They use zero kilometer ingredients, recover traditional recipes and reinterpret them with contemporary techniques. The result is an offer that fuses innovation and roots, adding value to both gastronomy and local producers.

The Gastronomic Agenda of Aragon 2025: a showcase of flavor

During the event, the Gastronomic Agenda of Aragon 2025 was also presented, a 250-page guide that brings together recipes, culinary events, popular festivals and seasonal products. For the first time, the publication includes a space dedicated to the 11 Michelin-starred restaurants, with photographs of their chefs and texts that put a face and voice to those behind this success.
