Before its Michelin star, Casa Rubén served sandwiches, lunch specials and grilled meat. The restaurant, opened by the family in 1987 beside the Bielsa road, gradually changed until its owners made a decision that reshaped the business: they removed the bar, discontinued the lunch specials and focused their work on a more personal culinary offering. That transformation led to the first star it received in the guide’s 2026 edition.
The restaurant is located in Hospital de Tella, a small hamlet in the municipality of Tella-Sin, in the Sobrarbe district of Huesca. Rubén Coronas leads the kitchen, while Cristina Romero oversees front-of-house operations. The restaurant retains the scale and hospitality of a family home, although its food now reflects a level of preparation and progression far removed from that of the former roadside inn.
Coronas trained at the Guayente Hospitality School before taking over the business. For years, he maintained its original direction while introducing gradual changes. The break came later: in an interview published by the Huesca Hospitality and Tourism Association in March 2025, he dated to roughly five years earlier the renovation that enabled him to develop the kind of cuisine he wanted to create.
The decision brought challenges. Some customers, accustomed to the previous offering, told him they would return when he brought back those dishes. The shift required finding new diners and explaining a different way of sitting down to eat, with more time devoted to the meal and service shared between the kitchen and dining room.
Stew as a starting point
The Michelin Guide describes the offering as traditional cuisine updated in technique and presentation. It is structured around a tasting menu called Sueño, which allows the dishes to be arranged as a complete meal and makes room for preparations far removed from the quick service that had once characterized the establishment.
Among the dishes highlighted by the guide is a Cinca sturgeon royale served with a roasted onion sauce. The dish illustrates Coronas’s approach: a product associated with the local area is incorporated into a classically executed preparation with a contemporary presentation. The modernization does not erase the importance of stocks, sauces and cooking techniques.
The region is an important reference point, although the chef avoids turning it into a constraint. In a 2025 interview, he explained his preference for local and Aragonese products, while also expressing his willingness to use ingredients from elsewhere when they fit the menu. That freedom helps explain a cuisine that maintains ties to the family tradition without reproducing it literally.
The dining room occupies a former stable beneath a stone vault that the restaurant’s website and Michelin date to 1593. It is an intimate space in which Cristina Romero’s work plays a central role. The service seeks to recover something of the former inn: welcoming travelers into the home and giving them time to eat.
A distinction bearing a village name
The star was announced in November 2025 for the 2026 Michelin Guide. It is therefore not the result of a recent opening, but recognition of a nearly four-decade history and its culinary evolution. That same year, Casa Rubén also received a Repsol Sun.
Hospital de Tella lies at the confluence of the Cinca and Yaga rivers, at the bottom of the valley. The local council describes it as a hamlet of barely half a dozen houses. Its location makes it possible to combine a visit with other places in Sobrarbe, including Tella and the Escuaín Gorges area, without confusing the restaurant’s location with the interior of Ordesa y Monte Perdido National Park.
For the district, the distinction adds another rural establishment to a guide with international reach. Its most immediate significance is that culinary recognition and the inclusion of Hospital de Tella among its gastronomic destinations. By itself, however, it does not allow for an estimate of increased visitor numbers, employment or income for the area.
Anyone planning a visit should book and confirm menu terms and service days directly. Casa Rubén manages its own reservations and remains a small-format operation: the business’s evolution has been built around the couple’s work and a meal that requires its time.
